{"id":872,"date":"2022-12-30T10:57:58","date_gmt":"2022-12-30T10:57:58","guid":{"rendered":"https:\/\/slowfoodbuzau.com\/?page_id=872"},"modified":"2024-01-19T09:58:58","modified_gmt":"2024-01-19T09:58:58","slug":"principii-si-criterii","status":"publish","type":"page","link":"https:\/\/slowfoodbuzau.com\/en\/principii-si-criterii","title":{"rendered":"Principles &#038; Criteria"},"content":{"rendered":"\n<p class=\"has-medium-font-size\"><strong>Slow Food<\/strong> is based on three interconnected principles:&nbsp;<strong>good, clean and fair food<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><p class=\"has-medium-font-size\"><strong>GOOD:<\/strong>&nbsp;quality, flavorsome and healthy food<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\"><strong>CLEAN:<\/strong>&nbsp;production that does not harm the environment<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\"><strong>FAIR:<\/strong>&nbsp; fair conditions and pay for producers<\/p><\/li>\n<\/ul>\n\n\n\n<p class=\"has-medium-font-size\">All members of the Slow Food Community Buzau should adhere to this principles. Our&nbsp;<strong>objective&nbsp;<\/strong>i<strong>s<\/strong>&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><p class=\"has-medium-font-size\">To<strong>&nbsp;increase the share of local ingredients<\/strong>&nbsp;in food production<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\">To&nbsp;<strong>increase the sales of local farm and artisanal products<\/strong>&nbsp;in Buzau county<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\">to&nbsp;<strong>increase the share of local products <\/strong>in the tourism value chain&nbsp;(use of local ingredients in restaurants\/ guest-houses, inclusion of local drinks in restaurant menus)<\/p><\/li>\n<\/ul>\n\n\n\n<p class=\"has-medium-font-size\">At the same time, local ingredients should be produced&nbsp;<strong>as natural as possible&nbsp;<\/strong>(without chemical fertilisers, artificial conservatives etc.).<\/p>\n\n\n\n<p class=\"has-medium-font-size\">To be promoted as Slow Food company within our network, we&nbsp;apply the minimum criteria&nbsp;mentioned below. At the moment, each company assures the compliance through an affidavit. In a later stage, we plan a monitoring and certification system for Slow Food members.&nbsp;<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Minimum criteria for vegetable\/ fruit\/crop farms:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><p class=\"has-medium-font-size\">Farm is rooted in a&nbsp;<strong>given territory<\/strong>&nbsp;(Buzau county)<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\"><strong>Sustainable farming approach (use of&nbsp;<\/strong>natural manure fertilizers that promote healthier soils, proper irrigation, and crop rotation;&nbsp;non use of chemical\/synthetic fertilizers, pesticides, and genetically modified growth enhancers)<strong><\/strong><\/p><\/li>\n<\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Minimum c<\/strong><strong>riteria for&nbsp;<\/strong><strong>animal and dairy&nbsp;<\/strong><strong>farms<\/strong><strong>:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><p class=\"has-medium-font-size\">Farm is rooted in a&nbsp;<strong>given territory<\/strong>&nbsp;(Buzau county), traditional and\/or sustainable farming methods (no industrial farm)<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\"><strong>Animal friendly husbandry (<\/strong>Ensure outdoor grazing for a good part of the year, and whenever the weather allows;&nbsp;Provide adequate, ample, and comfortable shelter, without&nbsp;small&nbsp;cages)<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\">Hormone &amp; Antibiotic Free&nbsp;(use&nbsp;of&nbsp;antibiotics only when absolutely necessary)<\/p><\/li>\n<\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Minimum c<\/strong><strong>riteria for food&nbsp;<\/strong><strong>and drinks&nbsp;<\/strong><strong>producers<\/strong><strong>:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><p class=\"has-medium-font-size\">Producer is rooted in a&nbsp;<strong>given territory<\/strong>&nbsp;(Buzau county)<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\"><strong>Food quality and sustainability<\/strong>, not quantity is the basic business principle (e.g. no GMO products, foie gras, ultra-processed foods etc.)<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\"><strong>Majority of ingredients<\/strong>&nbsp;(min. 50%) is from Romania, a substantial part (min 1\/3) of the ingredients is from&nbsp;<strong>local and natural production<\/strong>&nbsp;(not more then 50 km from production site)<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\"><strong>Producer does<\/strong><strong>&nbsp;not use artificial additives&nbsp;<\/strong><strong>in food production<\/strong><\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\">The&nbsp;<strong>products<\/strong>&nbsp;need not necessarily be traditional or autochthonous food, but they must be&nbsp;<strong>clearly linked to a local community<\/strong>.<\/p><\/li>\n<\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Minimum c<\/strong><strong>riteria for guesthouses\/ restaurants:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><p class=\"has-medium-font-size\"><strong>Majority of ingredients<\/strong>&nbsp;(min. 50%) is from Romania, a substantial part (min 1\/3) of the ingredients used in the kitchen is from&nbsp;<strong>local and natural production<\/strong>&nbsp;(not more then 50 km from production site)<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\"><strong>Parts of the menu<\/strong>&nbsp;are&nbsp;<strong>dedicated to the Slow Food concept<\/strong>&nbsp;or&nbsp;<strong>marked as special Slow Food menu<\/strong>(dishes with regional products, e.g. organic meat, products used from own farm, artisanal food products from Buzau, home-made production of specific dishes from local ingredients)&nbsp;<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\">Drink Menu contains&nbsp;<strong>drinks from local producers<\/strong>&nbsp;that are marked as local products (e.g. natural fruit juices, craft beer, organic wine)<\/p><\/li>\n\n\n\n<li><p class=\"has-medium-font-size\">Tourist are offered the possibility to&nbsp;<strong>buy products from local producers<\/strong>&nbsp;(e.g. Slow Food raft at reception desk)&nbsp;<\/p><\/li>\n<\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Criteria for others<\/strong>&nbsp;(tourism provider, association, institutions)<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><p class=\"has-medium-font-size\">The services offered are in line with the principles of Slow Food<\/p><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<div class=\"mh-excerpt\"><p>Slow Food is based on three interconnected principles:&nbsp;good, clean and fair food All members of the Slow Food Community Buzau should adhere to this principles.
